Spray a 9” springform pan with non-stick cooking spray, and place a circle of parchment paper in the bottom. Place pan on a plastic or metal tray that will fit in your freezer.
In a medium bowl, combine melted butter and cookie crumbs.
Press 1 ½ cups of cookie mixture into the bottom of the pan to form the crust.
In medium bowl, combine vanilla ice cream and chocolate chips. Spread evenly over the crust. Place in freezer for a minimum of 2 hours.
Drizzle dulce de leche over vanilla layer, and then sprinkle remaining crumbs. Freeze 30 minutes.
Spread chocolate ice cream layer and then distribute the chopped cookies on top. Return to freezer for a minimum of 4 hours before serving.
